When this Character is K.O.'d by my opponent's effect, can I choose to trash 1 card from my hand but not rest 1 of my DON!! cards?

No, you cannot. You must either choose to trash 1 card from your hand and rest 1 of your DON!! cards, or choose to do neither. If you choose to do neither, the effects after "If you do..." will not resolve.
